After over a year of pain, no energy, getting way overweight and then dropping pound after pound because I was getting sick, one of my close friends decided for me (I was not going to go) that I HAVE to go see a doctor. I was just kicking off event season and time was precious….but so was me being able to walk and function. I made the appointment and the doctor immediately told me that I have to get a ton of blood drawn and to cut out gluten, just in case. I went in for the blood draw that next morning and within 2 days was given the news that, yep, indeed I had celiac disease. I knew some about it because of a friend who also suffers from it, but not the extent of how this would change my life FOREVER. My initial response was, ok….I’ll stop eating bread and pasta, no big deal. Yeah, I wish that was all it entailed. My doctor told me to go through by pantry and pull anything that said it contained wheat, soy, and MSG. I figured I would get rid of a small portion of my pantry but no, almost 60% I had to part ways with. Sauces, spices, pasta, flour, dressings….things I would have never thought about – all gone. After the initial shock and tears, I realized that it could be worse, I could still be in pain. Life was not over, it was just beginning and in a much healthier way…..for the most part. 🙂
