Girl Brunch!

I love a good brunch but sometimes I just don’t feel like getting out. So then I invite a few friends over and do brunch at my house. My go to is a tostada topped with whatever breakfast meat I have in my fridge, over medium egg, cheese & salsa. Little red potatoes on the side. Delicious! For the tostada-a small amount of olive oil in the frying pan and heat up till a drop of water sizzles, then put a corn tortilla down and let it crisp up, flip and once crispy on both sides, remove and place on a paper towel to absorb any excess oil. Do this for all the tostadas. Plate and then add cheese….this helps the cheese melt and also provide a sticky surface for the meat. Cook whatever meat you prefer- I typically do either breakfast sausage patties or bacon and whatever excess grease, that’s what I use to cook the potatoes. Fry up some eggs- 1 egg per tostada and build your tostada. Tostada, cheese, meat, egg, salsa. If I have avocado slices I top with that. Potatoes on the side. Girl Brunch!
